Nan,
I pick mine when the stalks are about as big around as my finger. I
take a pocket knife and cut the stalk at the base/soil line. I have
read that you should not take all of the plant at once, although I have
and it has survived. They are tough plants here in Michigan. And just
as a reminder, only the stalks are edible, the leaves are toxic.
