How about in a root cellar. Eliot Coleman has some hints in his
"Four-Season Harvest" book, and I just bought a delightful book, full
of storage ideas called "Root Cellaring-Natural Cold Storage of
Fruits & Vegetables'' by Mike and Nancy Bubel. They have a chapter
called, ''Trenches, Keeping-Closets, and Other Vegetable and Fruit
Hideaways. Like a 2 bale high hay fortress set about your cabbage
with an old window on top. I've just looked into these ideas and have
yet to try them.
