Martha,
Does the catalogue say whether it is 55 days from planting or sprouting?
I planted mine 4/13, they broke through the soil on 5/7, so they have been
planted for 72 days, visible growth for 48. I know they will be ready when
they are ready, but I'd like to know how much longer I have to wait ( with
arms crossed and tapping foot impatiently).
Thanks,
Beth (MD zone 7)

My catalogs say 55 days, though mine took a few weeks longer than that.
(Someone said not long ago that there's a different Yukon Gold that takes
longer, but if yours is identified as mid-early, I'd say yours isn't that
one.)
