Purple prouting is a broccoli that is planted in late summer, grows to
about half size (5 leaves is optimum) and then winters over. In late
winter (in maritime climates, where it is best suited) it grows several
small purple broccoli heads about the size of medium side shoots on
conventional summer/autumn broccoli. Some varieties of cabbage and
cauliflower are also bred to grow this way. "Spring cauliflower" can
produce some enormous heads in March and April.
