CUTTING LETTUCE

I have an 8 foot bed of lettuce this year. All volunteers. I have found that
picking the outer leaves off, at the base, keeps the lettuce growing,
non-stop. My problem is that is turning bitter. Do I pull it up and start
over? What keeps it from turning bitter?
