I love bronze fennel as an addition to the perennial border. I have it in
several spots: next to a pale pink climbing rose, and growing up through
Achillea 'Coronation Gold'.
I also like the architectural hardness to the cardoon, though I would never
dream of eating it!!!
I assume you're referring strictly to vegetables, and not herbs...
