Here in my backyard in Los Angeles, I've got amaranth that just won't quit.
Both Golden Giant (I think it's called) and Lion's Head keep coming back,
year after year.
This year, one of the Golden Giants is about 9-feet tall -- and loaded with
thousands of seeds. My daughters like to thresh and winnow the seeds, then
we pop them -- in a cast iron Dutch oven with no oil works best. They make
tiny little puffs. But they've got a tasty, nutty flavor.
