Hello,
I'm new to this list and have been lurking and learning from you experts out
there in cyberspace. I am an ardent veggi gardener and grow a variety of
chilli, okra, beans, zucchini, water-melon, pumpkin, herbs, and a myriad of
fruit trees including guava, mango, custard apple, paw-paw, mandarin, plum, fig
and others.
A quick and easy way to cook zucchini is to grill it. Use 12 (thin) zucchinis
and slice into quarters lengthways. In a bowl mix 2 tbsp olive oil, 1/2 tsp.
each of: cumin powder, pepper, chilli powder, saffron powder, and salt to
taste. As an alternative to salt, use fresh lemon or lime. Spice should
lightly coat zucchini, so moderate spice to suit quantity. Coat zucchini
slices in spice mix and grill in oven. Turn once to grill other side.
