Allan,
the jalapenos, serranos or hananeros are hot peppers. habaneros are very
hot, and I wouldn't reccomend more than 1 unless you're familiar with them.
Even if you use a habanero, I'd put in a couple of the other peppers too to
flesh out the spicy, peppery flavor.  The jalapenos and serranos are a bit
less hot, I'd put in 3 jalapenos OR 4 serranos. If you prefer less spicy
food, then put in less.  You can often find jalapenos pickled in the grocery
store if you can't find them fresh. Cilantro is a leafy herb, also called
coriander sometimes. Fresh cilantro is essential to Mexican cooking because
it's so aromatic when chopped. It's quite prevalent in Thai cooking too.
