Some ideas:
Holly: Ilex glabra, Ilex pendunculosa, blue follows
Enkianthus: campanulatus, perrulatus
Viburnum
Leucothoe
Fothergilla
Pierus
Kalmia
Magnolia virginaina
Berberis thumbergii
Taxus
Lindera benzoin
Acer palmatum, pseudosiebolianus
Forsythia
Rubus oderatus
Tsuga
Euonomous: fortunii, alatus
Some of these have a looser form in shade which may or may not acceptable to
you.
I have no idea whether these are poisonous to livestock. Several are
ericaceous.
I avoid Kalmia angustifolia (aka Lambkill).
