Hollihocks & Dwarf Foxgloves

Dear ?,
 
I understand this is a free service, which is wonderful.
 
I live in Tasmania where it's early winter now.
 
I have nine foot high hollicocks and also dwarf foxgloves, both at the end of their flowering.
 
How and when do I prune them?
