campus gardens

Hello, I am a student at the University of Vermont.  A am currently
writing a 
proposal for my senior project.  I hope to set up raised beds and or
greenhouses on 
campus in which food can be produced for use in the campus dining
halls.  If anyone 
has any suggestions as to how I can make this happen, your input would be
greatly 
appreciated.

Also, if anybody knows of any university campuses where food production is
currently in operation, it would be great if you could let me know.
