I'm no expert on orchids, but I water my paphs twice a week.  They are
terrestials and need more moisture then others.  There may be nothing wrong 
with yours other than they are too dry.  My instructions for growing paphs
says they should never dry out.  

And you are absolutely right, that phalenopsis are the easiest to grow and
bloom. They don't even need as much light as other orchids do.  They can be
grown just by the windows!
