veggie beds/person?

since the subjects come up, i'd like to talk some more about this...
mel recommends no more than 2 sq. for 1 person to manage the first year.  i'm
jumping into the eq. of four (2 beds at 4X8' each) and justifying it by my
(limited) experience with gardening.  how many beds would a heavy veggie eater
need/person to supply the food?  i'm not as interested in putting foods away
for the winter, just eating alot of fresh homegrown produce this summer.
variety in the foods is important to me to which automatically requires more
space.
