I must admit I don't always follow the one seed per hole rule either. For
beans, I usually do, since they seem to have a high germination rate.
Besides, I'm planting so many at a time that it isn't a big deal if they
don't all sprout. Since each beet or chard seed is really a cluster of
several seeds, I usually just plant one. But for many others, I put at
least two in the hole. For zucchini, I usually plant two or three.
