<< I just started 12 Burgandy seeds in 2 old transplant 6 packs. Is that (=1
1/3 squares) enough plants to get ~1 lbs a week? How often do they need to
be harvested to keep producing? And I need to know how many pole beans to
plant, and how much to stagger the plantings etc. to also get ~1 lb a week.

Wow, you had a lot of questions. I don't know the answer to many, so
I'll just put in my $.02 about pole beans.
Pole beans are indeterminate and once they start, will continue
producing until they're killed by frost as long as *all* the mature pods are
kept picked. So, you don't have to stagger plantings like you would with bush
beans.....which mature all at once over a 2-3 week period. The difference is
just like determinate vs indeterminate tomatoes.
Pole beans need to be picked often....every day if you can. Every few
days at the least. If any pods get over mature that vine will stop producing.
For one pound a week, I'd say 30 plants would be enough. That may be way
too many and is just a guess on my part. One pound of beans isn't very many.
Hope that helps a little bit :)
