Wait until your butternut squash are completely tan and/or you can't 
puncture the skin with a fingernail (if you can puncture the skin, it will 
heal), then harvest with an inch or two of stem intact. Wipe off dirt and 
insects, bring squashes indoors to warm room for a week or so then transfer 
to cooler room, such as basement. It should last all winter.  I split them 
in half, use margarine on cut sides (after removing seeds, and these squash 
have a small seed cavity -- they're very meaty), put them cut side down in 
a pan and bake at 350 degrees for about an hour.  Some people make soup of 
the ripe squash (don't try cooking it before it's ripe), too.  Margaret L
