Butternut, and most other winter squash, seem to go well baked with
lots of butter or other grease and either brown sugar (my wife's
preference) or garlic (my preference) liberally applied (I also like
a substantial sprinkling of cayenne [or hotter] powder and comino --
I don't have a sweet tooth, I eat waffles with salsa instead of
syrup).
Eighteen squash plants this year evenly divided between summer and
winter varieties. So far, one green and one yellow summer squash, no
action except flowers from the rest of the sprawling plants. Well,
that's twice as many as last year. I'd think New Jersey wasn't a
good place to grow squash if I hadn't had to throw zuchinni away a
couple of years ago when it was growing faster than we could eat it.
