I think she's asking the question for canning purposes, Charlie. Tell her
to add a tablespoon or two of lemon juice to each quart of tomatoes, and
she won't have to worry about high acid. BTW, sweet tomatoes are usually
low acid. Some heirlooms are low acid, some high. I use lemon juice to
