I attended a powwow in Indio, California, last October where our hosts--the
Cabazon, San Manuel, and Twenty-Nine Palms bands of Mission Indians--served
homemade fry bread. It was great and the chow line crept along for 2
*hours* while guests waited at the end of it to have their own bread pulled
from the dough blob and cooked in the hot fat in very small batches.
The work was being done by a mother and daughter, operating pretty much
alone, for a crowd of perhaps 400.
I did not see what went into making the dough. But Cyn definitely has the
cooking technique down pat.
The bread pieces are around palm-size and puff up and brown
beautifully. The flavor was just a little bit sweet, so perhaps there is
some sugar in the mixture.
