There's always Trex, which is made from a combination of waste wood fiber
(sawdust) and recycled plastics (grocery bags, milk jugs, etc). It's heavier
and more expensive than regular lumber, but it's also very resistant to rot,
pests or deterioration. It's also chemically inert - no preservatives to
leach into the soil. It was initially designed for decks, but can be used
for a variety of other projects. It's perfect for raised beds!
The downsides are that it's heavier than regular lumber, and more expensive.
But your beds will last you 20 years or more.
They have a website (who doesn't?) at http://www.trex.com

Redwood will last the longest. But, it too will eventually rot out. I just
finished digging out and terracing my slope. I used two 2x6 pieces of
redwood stacked and screwed together. The end result was 8 2'x8' beds with a
small 1' step in the middle of them. The other choice is cedar but it is
harder to get and more expensive. Pressure treated wood isn't a good choice
because of the chemicals in it. Old railroad ties are even worse!
