Gophers create large mounds - but only at certain times of the year.  Most 
of the time you would not know they are around except you might see plants 
disappearing.

Moles (who are generally mouse size) do not eat plants, only grubs and stuff 
like that.  You can usually see their runs as they are only a few inches 
under ground.

Gophers (who are quite large 8-10" long or so) eat plants and dig large, 
deep tunnels (18" - 3' deep).  The only good thing about gophers is that 
they are solitary animals unless they have young.  The only way to get rid 
of one is to trap it.  You can find quite a bit of info on these animals by 
searching the web.

My dogs tore up my back yard (holes 4'X 4') trying to catch a gopher - 
finally had to hire a professional to get it.  It was leaving my garden 
alone but my dogs could hear it eating the roots of the grass and it was 
driving them crazy.
