The pest ramains a mystery but I think it may be a grasshopper. I found
one near my garden which was about 4-5 inches long.

Hi Kurt,
I too am in zone 9 in north central florida!!!! Last year I had a
horrible problem with grasshoppers. This year shortly after my seedlings
came up I again found some of the heads of my plants gone. I went out
and got some liquid spectricide and diluted it to half strength and gave
my garden a good spray. No problem since. I have also been told that if
you take all of your little soap scraps and put them in a spray bottle
with water or you can use a dish soap like dove or ivory and make it
really soapy so that it leaves a soapy film on the plants that the little
buggers cannot digest the soap but it does not hurt the plants.
That is my task for this afternoon.
