I guess the only major requirement is that you can reach into the centre of the beds without standing on them. I myself use beds 10' by 5', simply because that was the size of the edging timber I had on hand and I have a long enough reach. The only catch you might find with really long beds is that it might get inconvenient to walk right around the bed. Have fun, whatever size beds you end up with.
