Pat, I sold at a wonderful (strict with rules and regulations)
Farmer's Market in Fayetteville, AR for 12 years. I often dug iris in
full bloom, doing exactly as you said you are going to do, and sold them.
I check in with my customers and to a person, they told me the iris were
doing fine! I always gave detailed instructions about the planting and
always told the customer to expect some setback in bloom. The important
thing is to firm the iris in very well and even give it some support to
keep it from blowing over until the new roots take hold.
If the bloomer was in a clump, I cleaned off the surface
thoroughly so I could see what to cut, and with a sharp knife, simply cut
the rhizome with the bloom stalk on it off the clump.
I had customers come back the following spring and happily sing
the praises of the beautiful iris they bought last year and tell me that
it was blooming again this year!
And yes. . .a blooming clump sells MUCH better than cut iris or
rhizomes, (even with photographs of the bloom).
I also composed and printed up handouts on the "care and feeding"
of Iris (and all the plants I sold). It gave my customers the benefit of
my knowledge and gave them a lot of comfort about "doing it right."
