Hi Karen - they are seed pods. Sometimes they contain seeds, sometimes
they don't. Some folks call the empty pods "balloon pods". Each seed
has the potential to make an entirely new iris plant, sometimes similar
to the parents, sometimes different, depending on the genetic makeup of
each parent and how they mix.
There are some websites that describe hybridizing in detail plus there
is a lot of discussion in the Mallorn archives (see the links below my
signature).
