Jan, I agree with you about snapping stalks.  I was taught that snapping
stalks was quicker than cutting, but that not all stalks would snap
cleanly, and some had to be cut instead if they were to be removed. 
Actually, I learned this from an iris tape I bought that was put together
by Carolyn Hawkins (she is the editor of the design section in each issue
of the AIS bulletin).  After just a bit of practise, it became quite easy
to tell at once which stalk would cooperate, and which wouldn't.  If a
stalk won't snap, I use a sharp knife and cut it just flush with the
rhizome.  Sometimes I use the slightest angle on the cut.  I have never
viewed this as "wounding" the rhizome, but to me it seems neat and tidy. 
By so doing, I have eliminated another invitation to rot, especially for
rebloomers, luminatas, and other frail but lovely iris I am always trying
to bloom.
