For those doing pigment extraction, remember that an alcohol extraction will inclue all the iris pigments except lycopene. To seperate the watrer based pigments from the oil based pigments you need to add some oil to the pigment extraction and shake well, and then let it settle. The water based pigment remains in the alcohol and the oil based pigments move to the oil.
The anthpocyanins will deteriorate quickly in the alcohol. This can be delayed if some acis is added to the alcohol before extraction. How much acid depends on what you have handy and its strength.
