Other than Gold Kist, Katy is listed as the lowest chill requirement apricot for California. I have heard of ice cubes being placed at the base of the tree during cold weather to increase the hours of chilling requirements for a tree.
You mentioned that your tree was grafted with other varieties. Are those branches still viable? Have other branches sprouted below the main graft of the tree. If so then maybe you will need another pollinator to increase pollination for your tree.
I planted several grafter citrus last year and I notice that sprouts keep coming out below the graft and trying to take over the whole tree. The below graft sprouts are much more vigorous than the grafted portions of the trees and I have to keep cutting these sprouts off.
There is nothing better than a tree ripened apricot. I remember as a kid we had a single apricot tree in our yard and my mom used to make apricot jam and ! we would have the jam on graham crackers - boy was it good.
I hope you can bring your apricot into fruitig service.
