Whatever the locals may say I am sure the soil would be greatly improved
by giving it back some organic matter.  Many pics I have seen of Greece
show the most awful, bone white, eroded landscape, which seems to result
from a mixture of goat grazing damage and the failure to return ANYTHING
to the soil (well, apart from the goat dung).

That I can well imagine. It is hard to imagine countries more different
than Greece and Sweden. You must feel a true pioneer.
