dumb newbie question

Hello
I'm new to this list and pumpkins in general - I
have 3 plants that have about 10 feet of vine but every time I get a pumpkin
started (what I think is a pumpkin) - it gets to about golf ball size and then
starts to get dark yellow and soft - turns to mush a few days later. Last year (
my 1st year ) I grew 3 to about basketball size with little effort. All were
regular store bought seeds.
This time - I have 1 store bought seed plant and 2
that I got off E-bay that claim to be Atlantic Giants but each of those 2 is
basically 1 long vine, the leaves near the base are all dying, and the rest
never develops.
I'm n Florida so the sand (aka dirt) is not
good - but I tried using a lot on black cow brand manure around the
area.
Any ideas or tips??
