The fridge is indeed a dessicator, but one of unreliable quality in my opinion. Additionally, the refridgerator is an excellent source of mold spores and other contaminants. I wouldn't recommend this method for drying anying. The small cost of a few pounds of silica gel (5 lbs for $8 last time I bought any) and a sealed Tupperware type container are well worth it for a much more certain, and cleaner drying method.
This is assuming you want bone dry seeds. They reportedly last longer this way, and survive freezing better. To dry seeds straight out of the tomato or other plant, I simply lay them out on wax paper, as my home is sufficiently dry to render a single layer of seeds dry within a day or two.
