Cutting back perennieals

Should I cut my plants back before winter or leave them as is?  I had shasta
daisies, purple coneflower, coreopsis, red hot pokers, and several other
plants this year.  This was my first year with a new garden.  I am planning
on raking my leaves, shredding them and using them to mulch my beds.
