Hi to the canning question,
Nothing difficult about the process, you just need to be sanitary and
careful. Make certain things seal and the jars are sterilized.
Ball has a great book as well as your county extension service.
Describes step by step as well as various recipes.
I mainly can pickled veggies and freeze the fruits and tomatoes. Just
easier and I prefer the outcome.
Just be aware of being safe regarding botulism.
