Christi, although you can't grow them year round there are a few other ways to enjoy the taste longer. Making sauce is the most common but you can chop them up and freeze the chunks. This way you can use them in stews, casseroles, ratatoule(spelling!!), lasagna or other pasta dishes. in fact anything that you cook. You can even try drying them out for your own version of sun-dried. gilly ps I wrote my other reply before remembering that I hadn't read my mail for a few days and realising that the post was made a few days ago.
