Pat,

I think shallots do mature faster than onions but I still wouldn't harvest
them until some of the leaves turn yellow/brown.  Otherwise, you won't get
good wrapper formation. Some onion varieties like Walla Walla push up too
and I just hill them over with soil.

Of course, if you'd like to eat some now, go ahead and harvest but if you
want them to store for any length of time, keep them in the ground till
they're ready.
