Substitute for blue spruce

This Christmas when I was working with evergreens shared with me by my
neighbors, I came to really love and appreciate the blue spruce branches.
But with this particular evergreen, they don't call those "needles" for no
reason! They were very stiff and sharp (as opposed to fir or noble which
are pretty soft and supple).

I would like to plant something myself with this wonderful blue color, but
would like to avoid being stabbed while working with the branches. Any
suggestions?
