The choices are endless! For blue color, I'm partial to some of the firs
that are out there, especially Abies concolor 'Candicans'. I put

If you're not into firs, there are some pine options too. Try something
like Pinus flexilis 'Glauca' (although it's more of a gray-green).
There are also a ton of Juniper species, but if you're trying to avoid
getting stabbed they may not be the best choice. :)
