I'd fill the hole with mulch in the interim. Cover the exposed roots
and soak the mulch well -- when the landscaper comes back, he can
shovel out the mulch and then use it to dress the soil under the
tree. It will at least keep the roots cool and moist until Monday (or
whenever he chooses to show up). It should hold for at least a couple
of weeks if need be, too.
