Peony color question

In 1998 I purchased a tree peony, Shima-nishiki, and it just bloomed
this week. The peony was supposed to be white with red variegation, but
my bloom was solid red. When I emailed the nursery, they answered,
"please give the growth some more time". I know it will not bloom again
until next year.
I have had one peony bloom before, on a young plant. That bloom was
also different than the color shown in the catalog, but it was not so
extremely different as this new one. Can anyone tell me if peonies (or
other plants for that matter) change bloom color, as they age?
